Blood-Building Beef Chili

Blood deficiency is a term we use in Chinese medicine to describe patients who are suffering with the symptoms of anemia, blood loss, or lack of blood nourishment.


Symptoms of blood deficiency include: pale face, dizziness upon standing, blurry vision, floaters in vision, dry/dull hair, pale lips, poor memory, light menstrual flow or missing periods, difficulty falling asleep, generalized anxiety or depression and fatigue.

This recipe is especially beneficial to eat after experiencing a heavy menstrual period, following childbirth, or following any type of significant blood loss. In this gluten-free, dairy-free chili, beef and parsley are used to nourish the blood, and kidney beans help to increase blood circulation. This therapeutic blood-strengthening chili will help you feel stronger and more energetic.


Ingredients:

  • 1 lb. organic grass-fed ground beef

  • ½ sweet onion, diced

  • 3 cloves garlic, minced

  • 15 oz. can fire roasted diced tomatoes

  • 15 oz. can organic dark-red kidney beans, rinsed and drained

  • 1 green bell pepper, diced

  • 1 red bell pepper, diced

  • 1 tsp cumin

  • 2 tsp chili powder

  • 2 tsp dried parsley

  • 1 tsp coriander

  • 1 tsp sea salt

  • 1 TBSP avocado oil

Directions:

Heat avocado oil in soup pot. Once hot, saute the onion and bell peppers for 2 minutes. Add garlic and cook for 1 minute. Add ground beef, cumin, chili, parsley, coriander and sea salt. Cook until the meat is browned, about 5-6 minutes. Add salt and tomatoes and bring to a boil. Reduce heat and cover for 1 hour. Add kidney beans, stir into the chili and serve.
