This is a perfect soup for people that have a "nervous stomach" or suffer with irritable bowel syndrome. This soup is improves digestion and calms the stomach.
In general, orange-colored vegetables are beneficial for digestive problems and dark leafy greens improve stress and liver function. As you can see, these two beautiful colors come together in this calming soup. Sweet potato, turkey, and carrots all benefit the digestive system, while marjarom, coriander and turmeric are amazing spices that improve emotional stagnation.
Ingredients:
1 lb organic ground turkey
1 sweet potato, diced
2 stalks celery, diced
2 carrots, diced
1 leek, diced
3 garlic cloves, minced
8 cups chicken stock
6 handful kale
1 lemon, juiced
1 tsp dried marjarom
1 tsp dried coriander
½ tsp ground turmeric
½ tsp garlic powder
½ tsp onion powder
½ tsp sea salt
pinch of black pepper
1 TBSP avocado oil
Directions:
Heat avocado oil in large soup pot over medium high heat.
Add leeks, carrots, celery, sea salt, and pepper and saute for 3 minutes.
Add garlic and saute for an additional minute.
Add chicken stock, sweet potatoes, ½ tsp marjarom, ½ tsp coriander and turmeric.
Bring to a boil and reduce heat to low. Simmer for 20 minutes.
While soup is cooking, add ground turkey to a saute pan. Add ½ tsp marjarom, ½ tsp coriander and a sprinkle of sea salt and pepper. Drain fat from the pan and set the turkey aside.
Add turkey, kale, and lemon juice to the soup and cook for 2 minutes until kale is wilted. Divide into bowls and serve.
